In Trentino, different climates and terrain unite to produce exceptional, precious, inimitable wines. The care and skill of the Trentino vine growers then contributes to the creation of wonderful wines that have conquered the world’s palates and continue to receive top awards.
Grappa is an exclusively Italian liquor resulting from distillation of grape skins, which in Valle di Cembra are particularly rich in aromatic substances, thanks to the pedoclimatic conditions in this area and the big differences in the period preceding the harvest.
Rational beekeeping started in Trentino in the nineteenth century, with the introduction of wooden hives with movable honeycombs and removable frames, plus specific equipment such as the honey extractor.
Strawberries are mainly grown in Val dei Mocheni, Valsugana and Altopiano di Piné, at an altitude of 500 to over 1,200 metres. The same goes for wild strawberries, the most characteristic of soft fruits.
Cattle farming in Valle di Cembra and Altopiano di Piné was limited to just a few heads. So in the nineteenth century, shared-ownership cheese factories were set up in various towns. The milk was brought here, even in small amounts, processed and sold as cheese.
One of the most typical products in Valle di Cembra, made from processed fresh meat, is the luganega, mentioned in documents as long ago as medieval times. This pork salami is flavoured with salt, black pepper and garlic and then aged for at least four weeks.
Porcini, chanterelle, honey mushrooms and many more varieties can be found in Altopiano di Piné and Valle di Cembra.
